His reputation may have spread beyond the maquis of the Plaine Orientale, but Chef Sergio's cuisine uses local ingredients more than ever. It has to be said that the ideal location of Chez Marie - in the heart of Corsica's agricultural plain - and the links forged with local producers give him access to a wide range of flavours. Organic vegetables and citrus fruits, olive oil, Nustrale pork, local organic veal, cheeses... these are all quality products, some of which can be found in our grocery shop, and which the Chef showcases in his fresh, authentic cuisine with inspired variations: blanquette de veau and its homemade purée, osso bucco with citrus fruit, coda a la vaccinara, organic Corsican beef meatballs... Italy is also represented in the pasta à la carte, the most famous being the clam pasta and the carbonara. As for the desserts, you'll love the pastries of the day, some with unexpected flavours, such as the inimitable citrus moelleux, which, depending on the season, is made with clementines, oranges, pomelos or lemons.
