A L'USU MATTEI
The A L'USU MATTEI traditional canning factory in Aleria promotes Corsican gastronomy through traditional recipes cooked by hand in jars: Terrines: wild boar & myrtle, with figatellu and "A lustinca" (with berries from the Corsican maquis). Traditional cooked dishes: figatellu lentils, figatellu beans, locally caught fish soup, blue crab soup from the Etang de Diane, Corsican soup, veal with olives, veal tripettes, lamb in sauce. Jarred desserts: sweet chestnut PDO, sweet hazelnut IGP from Cervione, and canned fiadone, an innovation presented at the Salon de l'Agriculture 2025 in Paris. The recipes are made without additives or preservatives from fresh produce. A cannery committed to know-how and authenticity. Visit the canning factory by appointment by telephone or e-mail.
